Eat This Immediately: Indian Fried Game Hen at Sbraga

Last night we had the pleasure of checking out the new spring menu at Sbraga. The meal was amazing from the foie gras soup to the bay leaf ricotta-filled agnolotti with sea beans and crayfish but the game hen was an absolute show-stopper. Spiced with vadouvan, a French-influenced Indian spice mix and deep fried golden brown, it's served with fluffy-squeaky house-made paneer and a gorgeous spinach puree. Seriously, we wish this came by the bucket, KFC style.
