
Great Sandwiches: Introducing Nathan Johnson of Garces Trading Co.

Today we're talking sandwiches with Nathan Johnson, chef at Garces Trading Company .
Favorite sandwich: Italian Hoagie, its all about the quality of the bread and the ingredients, though because everyone does an Italian.
Least favorite sandwich: Peanut butter and onions... saw it on a movie once and it sounds horrible. Everything else is fair game.
Most memorable sandwich experience: The first time I ever had a torta in Phoenix. It was at a little taco shop downtown and they serve all there food on styrofoam plates. Probably not the cleanest restaurant I've ever eaten at, but the food is spectacular. The do a torta de salchicha with refritos, avocado, lettuce, tomato, roasted jalapenos and some other goodies, and it just blew my mind. It was the perfect combination of all the textures and flavors that I wanted. The whole "little shack straight from Mexico" helped the entire experience. I will never forget it.
Best Philadelphia sandwich:I'm new to the city, so I haven't had much time to scope out the scene, but Paesano's does a great job with their brisket and fried egg sandwich with horseradish mayo.
Sandwich deal breaker: Crappy Bread. I feel as though I can overlook some of the other issues that often come with sandwiches but if the bread sucks, I'm over it.
