Wood-fired oven is going in!
Looks like hotly anticipated Petruce is getting a little bit closer to their projected wintertime opening date. We just spotted this progress pic of the wood-fired oven going in at the 1121 Walnut Street space. The pair behind Petruce are brothers Jonathan and Justin, both former sous chefs at David Katz's Meme as well as at Little Fish and M.
No word yet on an opening date but for now you can get a sneak peek at Petruce's bread program with a COOK class happening on January 5th. Justin Petruce is going to be demoing naturally fermented sourdough.
